African Peanut Stew (Bob's Famous Elephant Stew)

Oil, divided

Well-trimmed beef, cut into 1-inch or smaller cubes
|
2 pound

Flour
|

Nutmeg

Chili powder

1 tbsp.

Medium onions, sliced

Minced garlic

Water

5-6 cup

Red pepper

up to 1 tsp.

Tomato sauce

3/4 cup

Carrots and peas (optional)

Chunky peanut butter
|
1/2 cup

Steamed rice

|
In a large heavy kettle, heat 3 tablespoons oil. Roll beef cubes in flour, and brown in hot oil. While this is cooking, add nutmeg and chili powder. When meat is browned, add onion, garlic, water, red pepper to taste, and tomato sauce. Simmer until meat is tender. If desired, add carrots and peas while the stew is simmering. A few minutes before serving, heat peanut butter and the remaining oil (this may be done in the microwave). Stir peanut butter mixture well, and pour it into the beef stew over low heat. Once the peanut butter mixture is well absorbed into the stew (about 15 minutes), serve over steamed rice. Offer hot sauce at the table.
