Mama Mia's Pizza
Once this pizza came out of the oven and we kids dug into our first slice, Mom would put the pan on top of our wood-burning stove to keep the seconds warm. There were never any leftovers! As an adult, I introduced Mom to my favorite new pizza toppings, included in this adapted recipe.


yeast, 1 Package 2 1/4  tsp.  
Water, lukewarm 1  cup  
sugar 1  tsp.  
vegetable oil 2  tbsp.  
salt 1  tsp.  
flour 2 1/2  cup  
tomato sauce 1 8-oz can   
tomato paste 1 - 5 1/2 can   
clove garlic, minced  
dried basil 1  tsp.  
dried oregano 1  tsp.  
Fresh ground pepper, to taste    
cooked ground beef, with sautéed onions 1 1/2  cup  
crumbled feta cheese 1  cup  
shredded mozzarella cheese 2  cups  
Roma tomatoes, sliced 3-4   
Handful of fresh basil leaves    


Dissolve yeast in water, then add dry ingredients. Stir vigorously with a wooden spoon for 20 strokes. Let dough rest for five minutes before stretching and pressing over a lightly greased cookie sheet. Brush stretched crust lightly with olive oil to keep the sauce from making it soggy.

Mix and spread over prepared pizza crust, leaving a ½ inch border.

Spread first three toppings over crust and sauce. Bake at 400 F for 20-25 minutes, or until cheese is bubbly. Remove and add sliced Roma tomatoes and basil leaves. Return to the oven for five minutes. Let sit for a few minutes before slicing.
