Smoked Salmon and Brie Frittatas

Make it a meal with small potatoes in chive butter, and steamed asparagus tossed with toasted sliced almonds and lemon juice.

Large eggs, fork-beaten

Smoked salmon, coarsely chopped

170 gr.

Brie cheese, chopped
|
3 1/2 ounce
|
100 gr.
|
|
Chopped fresh dill
|
1 1/2 tbsp.
|
25 mL
|
|
Capers, finely chopped
|
1 1/2 tbsp.
|
25 mL
|
|
Freshly ground pepper
|
1/2 tsp.
|
2 mL
|
Combine all 6 ingredients in large bowl. Fill 8 greased muffin cups with 1/3 cup (75 mL) salmon mixture. Cover with foil. Bake in 375°F (190°C) oven for 10 minutes. Remove foil. Bake for further 10 minutes until set. Let stand in pan for 2 minutes before turning out onto serving plates. Makes 8 frittatas
